Ingredients:
1 tb olive oil
1 large onion, diced
2 small carrots, sliced
350 g potatoes, cut into bite-size pieces
1 kg frozen peas
3 large tomatoes, diced very small
50 g tomato paste
2 vegetable stock cubes
1 tsp garlic powder
1 tb dry dill or 3 tb fresh dill, finely chopped
1 tb coconut sugar
Salt and pepper, according to taste
Instructions:
1. Heat the olive oil in a medium pan.
2. Sauté onions until soft. Add carrots and
potatoes and sauté for 3-4 minutes.
3. Add peas and stir well.
4. When everything is heated up, add the
tomatoes, tomato paste, stock cubes, garlic powder, dill, sugar, salt and pepper. At this point, the sauce should just about cover the peas. If it doesn't, add a very small amount of water (about 50 ml).
5. Stir well and bring to a boil. Then lower the heat and simmer for 30 minutes, until the peas are soft and the sauce is thick.
6. Serve with vegan feta and fresh bread, to dip in the yummy sauce.
